The Form Matters
Heme iron, the type found in animal tissue, is absorbed differently from non-heme iron found in plants. The nutrient profile behind grass-fed liver
Liver concentrates nutrients rather than manufacturing them: it is where an animal stores its own vitamin A, B12, copper and iron. Per 3 oz cooked, that comes to 7,744 µg RAE vitamin A, 83.1 µg vitamin B12, 14.6 mg copper, 418 mg choline and 6.2 mg iron — predominantly heme iron, which the body absorbs far more readily than supplemental non-heme forms.
